Happiness is Strawberries
Did y’all know August is “Happiness Happens” month? And you know what? It just does, if you choose to see it. For us, it’s the little things. Sitting on the front porch, watching the birds hop around, a day when #MiracleMike doesn’t have a backache or his appetite is strong. One of the things that makes us happy are strawberries. Are we weird? Probably, but hey, they make us happy.
In the past when strawberries were on sale I would make this:
It makes way more than we can eat these days so I started looking for something that was bite sized. I didn’t really find anything, so I decided to come up with something on my own. And I did…….

To make these you’ll need
2 oz of cream cheese ( softened)
2 cups of heavy whipping cream
1/3 cup of sugar
1 tsp of vanilla
1 pint of strawberries
I package of frozen small Phyllo or (Fillo how ever you spell it) cups and bake as directed on the package. Bake them first so they have time to cool.
Bake the Phyllo cups as directed on the package and set aside. They need to cool while you mix everything
In a large mixing bowl, mix the cream cheese and the sugar together well. Then mix the whipping cream and vanilla into that mixture.
Let it set up in the fridge while you chop the strawberries into tiny pieces. Fold into the whipping cream.
Using a tablespoon, spoon the mixture into the cooled Phyllo cups and chill.
I was worried about the cups getting soft, but they didn’t~ Of course when youngest Grand got here a couple of days later they were gone before he went home. So WIN WIN for me, I made #MiracleMike and Youngest Grand happy.
They’re not too sweet, which is a good thing when trying to eat healthy, they’re bite sized, well ok maybe two bites but easier than digging a plate out and cutting the roll version.
