Southerners love to eat. Sharing food is a way of life. There is nothing better in our minds than sharing a meal with friends or family. In addition to feeding and fueling our bodies, it feeds our soul.
Someone having a hard time, well we feed them! Take them supper, including dessert and sweet tea, of course!
Sharing recipes is part of that, though we all have one or two that have been passed down from generation to generation that we guard closely and don’t share. Sorry y’all!
Thankfully Belle Kim is sharing her recipe for Cowboy Cookies with us. She made them with her Mama and has been making them all her life. ( She told me how long she’s been making them, but to tell would be very un~Belle like) These would be good if you’re taking a meal to someone as a dessert. Or make them eat them, which is what I did last night………
1 cup butter
1 cup white sugar
1 cup brown sugar
2 cups all purpose flour ( I used self-rising and didn’t add the baking powder and soda)
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
2 cups quick oats
1 cup chopped pecans
1 16 o.z package of chocolate chips
Cream butter and sugars. Blend well. Combine dry ingredients and add to creamed mixture. Mix well and stir in oatmeal, pecans and chocolate chips. Drop by teaspoonful onto ungreased cookie sheet. Bake at 325 for 10-12 minutes. Makes approximately 4 dozen.
