Many of you know my Mother passed away on November 11, 2013. This is one recipe that my brother and I requested her to make for family gatherings. In going through her things I found a handwritten cookbook with many of her favorite recipes. I treasure it because its in her own handwriting, is stained from years of use.This recipe makes 2 pies
Ingredients for Pie Filling
1 1/2 C sugar
6 heaping Tablespoons of plain flour
5 Tablespoons of Cocoa or 5 squares of baking chocolate, melted
4 egg yolks, beaten – Whites reserved
4 C of milk
1 Teaspoon Vanilla
2 prepared cooked pie crusts
Ingredients for Meringue
4 Reserved Egg Whites
6 Teaspoons Sugar
In a heavy saucepan combine, Sugar, flour, cocoa, egg yolks and milk
Stir over medium low heat stirring constantly. This will take forever to thicken. This does not really thicken after it cools so it needs to be a the consistency of prepared pudding when you finish. After both arms have fallen off twice, Ha Ha, add Vanilla.
Pour into prepared pie crusts and cool. While pie filling is cooling, place a metal bowl in the refrigerator, just a tip for the best meringue ever. When filling is cool, take your chilled bowl and add the egg whites and beat with electric mixer until stiff. Add 1 teaspoon of sugar, one spoonful at a time. Beating in between each addition. When meringue is done, smooth over the chocolate filling and bake for 10-15 minutes until peaks are starting to brown.
